A PERFECT PAIRING --> I typically pair lamb with Pinot Noir. I also use it to marinate the meat. I discovered this Saint Gregory Pinot Meunier from Mendocino, CA last year and it's a perfect pairing with lamb and pork. Pinot Meunier is one of the 3 varietals used in the production of Champagne (along with Pinot Noir and Chardonnay) and one of the most widely planted grapes in France. This wine has a beautiful balance between acidity, ripeness and is lightly tannic (dry/bitter). In Houston you can find this wine at Vine Wine Room. Cheers and Happy Friday!
